This will be my third Henckels knife and I love it. It's a good weight, comfortable to hold, and very sharp.
Excellent quality, weight, balance and blade sharpness. Simply the best, I’ve talked my whole family into using this knife!
This is a great knife for a good price. I didn't want to spend a hundred on a pairing knife, but wanted something decent. This knife is sharp, feels great in the hand, and has good weight. I like it so much I might just buy another, and another. Highly recommended.
I’d forgotten what it feels like to have a weighty sturdy super sharp paring knife. I love this little knife so much.
Nice knife. Well balanced, good weight, blade is nicely shaped, handle is shaped well and fits well. Full tang handle, but it's only double bolstered. Only reason for 4 stars is that I can only assume that because it is forged and "German Stainless" that it is also high carbon, but sure would like to know for sure. (Never heard of forging straight stainless steel.) probably my second favorite paring knife ever, behind only my 25 year old Gerber (which apparently isn't manufactured any more). I prefer Wusthof and Dexter Russell, but I like this paring knife more than those two brands.
We compared multiple paring knives. This knife had by far the best handle. All cut well. The only down sides to this knife were expensive and heavy. The wonderful handle made up for it.
I have always had good experiences with Henckels knives, and these are no exception. Although on the cheap end as far as knives go, they are good quality knives, and feel very solid. I love the balance as well, the handles are really well built and easy to grip even if your hands are slippery, and I have fairly large hands and I love the way these feel in the hand. Holds a great edge as well.
I have had loads of cutlery, both very nice and expensive pieces from F. Dick and others, down to everyday cheapos. This knife is right up there as far as steel goes, and the feel of it is really nice. Heavy and well balanced. I hope that it can hold an edge, but from bouncing it off the counter tiles and listening to the tuning fork effect, I do not doubt that the temper and hardness are superior. I wish that I had gotten the whole set!
UPDATED REVIEW Oct 2023:MARKETING HYPE converted into useful consumer FACTS! This review covers all aspects of the 4 forged Synergy series knives I regrettably purchased in 2021.Knife #1. The PARING KNIFE was delivered new with a Sharp edge on its forged blade, the blade is welded to the forged Bolster component. When joind they're welded to the unknown material full Tang component thats capped with stainless steel. The stainless steel cap is enclosed on 3 sides by an ABS plastic handle. The handle is comfortable and provides good affordance. Overall the knife isn't well balanced, it has an unusually heavy handle. This paring knife has a useful and effective spearpoint tip. It's a Stylish design, but unfortunately it prioritizes this over edge sharpness retention and structural integrity. The blade just doesn't stay sharp. After 24 months of infrequent, mostly fruit and vegetable paring, the original sharpness only lasts a few weeks with regular use. It's been resharpened >15 times and requires weekly rehoneing, to stay sharp enough to effortlly slice soft tomatoes or firm sweet mini peppers. I contacted Henckels customer service by phone and asked, "What kind of Steel is the blade made of ?" They responded with a unhelpful and defensive response "IT'S a PROPRIETARY SECRET". I then asked J. A. Henckels customer service Representatives via email, Are Forged Synergy knives 1 piece fully Forged products, from the blade through the bolster into the Tang designs?THEY COMPLETELY DECLINED to answer MY INQUIRY. J.A.Henckels Is your company afraid of transparency of the real specification facts! It turns out YES they are. When they have NOTHING good to say, they say NOTHING! If they had provided the honest specification facts on their website, and on their provided retailers product information disclosures, I WOULDN'T have purchased them in the first place! The marketing HYPE names "FORGED SYNERGY " and "QUALITY GERMAN STEEL" are both purposely misleading and meaningless word play suggestions. Providing no facts to back up their vague and misleading product description statements. They would like you to assume by using the inference that made from "quality German steel" means it's medium quality X50CrMoV15 steel, like was previously used on the Spanish made Henckels CLASSIC series knives, NO it's not, and they don't use it anymore!Maybe it was the same as used on my German made Zwilling PRO series w/ enhanced ice tempered X15CrMoV15 MEDIUM QUALITY German Steel used in the 2020 production of the 7"chefs knife? Absolutely NOT or EVEN CLOSE to it! Unfortunately FORGED SYNERGY KNIVES are fabricated from significantly LOWER "QUALITY German Steel" that's shiped to and fabricated in CHINA!NOTE: Saying made from "quality German steel" can mean almost anything! They would like you to ASSUME by VAGUE INFERENCE, that "fully forged blade", "fully forged bolster", or "SEAMLESSLY TRANSITIONING FROM THE BLADE TO THE HANDLE", means these are fully forged knives. Don't ASSuME this. These knives are MULTIPLE FORGED components, that are then WELDED together into one assembled SYNERGISTIC piece. That is how they can technically call this product "FORGED SYNERGY". If a knifes claimed features seem too good to be true for its price, ASSuME that they don't possess them. If you are using these knives daily for prepping, even when using a bamboo cutting board, they will need to be VERY FREQUENTLY resharpened. I would suggest using the fine edge NOT FULLY "FORGED SYNERGY" knives only as INFREQUENTLY used task knives, because their LOW QUALITY GERMAN STEEL type DOESN'T stay sharp. These are my observations from the other NOT FULLY "FORGED SYNERGY" series task knives, that I have regularly used over the last 24 months I purchased these NOT FULLY "FORGED SYNERGY" series knives BEFORE I KNEW THE TRUTH! I ASSuMED they all possessed Henckels medium quality German steel, and I believed that they were FULLY FORGED knives, THEY DON'T and THEY ARE NOT. I WAS TOTALLY FOOLED!Knife #2. My infrequently used SERRATED 8" BREADKNIFE is pretty good. It's the best balanced knife in the NOT FULLY "FORGED SYNERGY" series. The handle is comfortable and offers good affordance. It makes clean low effort cuts. Serrated knives stay sharp longer, because they have multiple points that protrude above the recessed sharp scallops, and hit the cutting board first. I like it 3x better than all of the other NOT FULLY "FORGED SYNERGY" series of knives!I recommend it with reservations, because it's not fully forged. DON'T DROP it or put too much pressure on the handle, if you're slicing something hard like a pineapple or semi Frozen food, because the blade can break off at the blade to blade bolster components weld!Knife #3. My infrequently used 5.5"BONING task KNIFE is not good. It's very unbalanced due to its heavy handle. It was very sharp when new, but didn't stay that way for very long. It isn't flexible at all, this inhibits its main function of boning! AVOID IT ! At any price !Knife #4. My most frequently used 5" SANTOKU prep KNIFE is terrible, it wasn't sharp new out the package. It took a sharp edge when resharpened, but it doesn't hold it's edge when used daily. Why does it only have grantons on its left side? It doesn't cut straight or release food well because of this. It's blade bevel angle is too acute to be durable, because of it's use of soft low quality "proprietary Secret Steel". Henckels sets the bevel angle at 10°-12°. That greatly affects its edge retention ability. SHARP STYLE but overall DULL PERFORMANCE! AVOID IT! At any price.I purchased all of the above described knives on sale in the very low $15-$25 price range, and even at those tempting price points, I regret buying them! I should have spent twice as much per knife, to get true one piece FULLY FORGED knives that were made from much better quality IDENTIFIED steel, that would stay Sharp LONGER and offer BETTER overall PERFORMANCE and DURABILITY over their service life. Hope this helps you from making the same mistakes that I did. BUYER BEWARE, CAVEAT EMTOR , BUON APPETITO!
Used for 1 week and is sharp so far. This knife fits comfortably in my grip as I cut with confidence. Some knives dull quickly after little use. Let’s see. But it sure feels good as I use it.
